The Vermont Grillstone
Your Grill’s New “Best Friend”

My wife Joanne is the consummate cook and I bow to her on most questions and recipes, but I feel great pride in some of my own recipes using my favorite grill accessory: our own Vermont Marble Museum "Grillstone." This natural basalt stone is the perfect surface for delicate fish and vegetables and with just a few uses will add wonderful flavor to any food grilled on its surface.
The Grillstone requires very little time to heat up and will retain heat for an extended period of time. The nature of this solid surface not only addresses the problem of loosing the perfect pepper or piece of flaky fish to the grill god, it provides the perfect even heat and allows fish to cook in its juice for a wonderfully moist end result. The Grillstone is "self cleaning" by simply flipping it over prior to the next use.
In the summer we grill an average 5 nights per week and enjoy the bounty of our large vegetable garden and the wonderful local trout, as well as the large variety of fish available to us due to our proximity to Maine and New Hampshire salt water fisheries. Local lamb and veal add to the selection as well.
In the Winter, in addition to our "regular" outdoor activities like cross-country skiing, snowshoeing, skating, snowmobiling, ice fishing, winter camping, and sauna, we do plenty of winter grilling! When most folks are storing the grill away until next the summer, we simply move it into our attached screened-in porch and continue to grill about 4 nights per week. I mainly cook fish of all types and vegetables on my Grillstone, but I have friends that will venture off to using it to bake on the grill, cook chicken, and seem to limit the uses only to their imagination.
We "invented" the Grillstone at the museum a few years ago and have sold them as fast as we can make them, often seeing visitors return to purchase multiple units in order to give one to all the "Grill Chefs" in their family!

Grilled Lamb Marinade
For 3-4 lb. boneless leg of lamb
- 3 tbl. soy sauce
- 3 tbl. olive oil
- 3 lg. cloves of garlic (pressed)
- 1/2 cup mustard (spicy)
- 1/2 tsp. ginger
- 1/2 tsp. thyme
- 1/2 tsp. rosemary
- Trim fat from lamb.
- Prepare marinade
- Mix all ingredients well and spread
- Place in plastic bag / refrigerate 24 hours.
- Grill.
